I call it the all-in-one mashed potato. Why? Besides the large contribution of carbohydrate from potato itself, this wholesome mashed potato is also served with corn, carrot and broccolini. I was first introduced to broccolini when a vegetable seller at wet market told me about it. The outlook is as if a marriage between broccoli and kai-lan. The beauty of this green is all parts are edible from the floret, leaves to the stems. A popular dishes in Japan particular in spring, it is usually prepared by steaming, sauteeing or stir-frying, the vegetable is sweet and crispy. It is also a good source of vitamin C, vitamin A, calcium, folate and iron. Personally, I prefer it over broccoli but the price is slightly on the high side.

Ingredients:
3 large potato preferably Russet or alike - peeled, steamed & mashed with fork/food processor
1/4 cup fresh milk
1/4 cup corn
1/4 carrot - diced
1/2 cup broccolini - chopped
1 tbsp butter
Dash of salt & pepper

Method:
1. Place carrot, corn and broccolini on steamer tray. Steam for 10 mins or until they are kind of soft.
2. Grab a pot. Melt the butter at low heat.
3. Place in mashed potato and add milk. Stir at low heat.
4. Toss in the steamed corn, carrot and broccolini.
5. Continue to stir well.
6. Season with salt and pepper to taste.
7. Ready to serve.
